I love pizza. A lot. Unfortunately, that red sauce doesn’t love me back. Heartburn city, even with medication. What can I say? I’m in my middle aged era. VIDEO HERE

The ingredient list direct from King Arthur includes their custom blends of dough and pizza seasoning, but it isn’t necessary, you can make your own. Just think about what you put into pizza sauce. I mixed garlic powder, onion powder, oregano, basil, parsley, and some ground white pepper. All things we keep on hand. If you don’t have a mortar and pestle set, you should think about it. It makes it easier to combine granular spices with leaf spices. I have a stainless steel one from this company and I love it. Honestly, when we got it I figured it would live at the back of the cabinet and never get used. I use it way more often than I thought I would, and it is super easy to clean up, I just rinse mine with water and wipe it dry.

The only other decision you have to make is what size/shape you want these bites to be. I thought about breaking out my mini muffin pan, but that seemed like a lot. I decided to make my bites slightly larger and just drop the dough onto a cookie sheet. It worked great!

A few things to note. I did NOT add cheddar powder. It isn’t something available in the stores here. I finally ordered some from amazon because, while I did use parmesan, I can really see how the cheddar powder would ave leveled these up. I also didn’t add scallions. That was a texture choice for me, you all know I am about that sort of thing. I only baked one batch of mine. I froze the rest to be baked later. Just scoop them onto a cookie sheet and put that into the freezer. When they are solid, drop them in a bag. You can brush them with cream and bake them from frozen whenever you’d like, they will just take a little longer in the oven, so you’ll need to watch them.

These won’t win any beauty awards, but they get a blue ribbon for taste and texture. They were slightly crunchy on the outside, soft on the inside, and the flavor was better than any pizza crust I’ve ever had. These would make the perfect side for a huge salad, or just one their own with some dipping sauce. Maybe a pizza sauce or garlic butter. Us midwesterners know that ranch is the superior dipping sauce, so maybe give that a try!

Ingredients

  • 1 1/2 cups (180g) all purpose flour

  • 1/4 cup (28g) cheddar cheese powder

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon table salt

  • 2 teaspoons King Arthur Pizza Dough Flavor, optional

  • 1 teaspoon King Arthur Pizza Seasoning, (plus 1/2 teaspoon to sprinkle atop the biscuits)

  • 4 tablespoons (57g) butter, cut in pats

  • 1/2 cup (50g) pepperoni, diced (low-fat turkey pepperoni is fine)

  • 1 cup (113g) sharp cheddar cheese, shredded

  • 1/4 cup (14g) sliced scallions, optional

  • 3/4 cup (170g) milk

Directions

  • Preheat the oven to 425°F. Lightly grease a bite-sized tart pan; a mini muffin pan, or a baking sheet. If using the pop-up tart pan, have an ungreased baking sheet available to use as a base.
  • In a medium-sized mixing bowl, combine the flour, cheese powder, baking powder, salt, Pizza Dough Flavor, and pizza seasoning.
  • Add the butter, working it in until the mixture is crumbly.
  • Add the pepperoni, shredded cheese, and scallions, mixing to distribute
  • Add the milk, mixing just until everything is evenly moistened.
  • Scoop the dough by the level tablespoonful into the pop-up pan, or mini-muffin pan. Place the pop-up pan onto a baking sheet to catch any drips. For bigger bites, dollop the dough by heaping tablespoon scoops onto the prepared baking sheet.
  • Sprinkle the biscuits with 1/2 teaspoon pizza seasoning, or your favorite dried herbs.
  • Bake the biscuits till they’re a medium to deep golden brown, 10 to 14 minutes.
  • Remove the biscuits from the oven, and cool briefly on a rack. Use a table knife to pop the bottom of the pan off the biscuits. Serve warm.
