Week 36 – Applesauce Oatmeal Bread

Now turn that into BREAD. That’s what this recipe is. And it is heavenly!

I love a good quick bread. Partly because most of them are “sweet” breads, but mostly because, as the title implies, they are QUICK.

This recipe was mixed BY HAND in under ten minutes. It would have been closer to five if I wasn’t recording for YouTube.

The most time consuming part is the baking, at 55 minutes.
But let’s get back to the flavor… All of those wonderful apple pie flavors, but less messy. It’s hard to justify a piece of pie for breakfast, MUCH easier to accept a slice of bread.

Who am I kidding, I’ll eat whatever I want, whenever I want, because food holds no moral value. Love yourself people!

In other semi-unrelated news, I ordered a new mixer. They don’t even make mine anymore. I won’t lie, the disappointment I feel with the KitchenAid company is pretty massive. I really struggled with what to do about the entire situation. It would have cost $100-$200 and most of a day to drive into the city to have my mixer repaired. Sams Club had some on sale. When we talked it over and realized how much we had invested in KA mixer attachments, we decided to go ahead and replace the broken mixer with a new KitchenAid mixer. I won’t lie, I’m nervous about it. It arrives this next week, so we shall see.


I’m trying to give the company some grace as well. My mostly dead mixer was manufactured at the beginning of 2021. If you’l recall, thanks to the pandemic, companies were struggling with getting parts and keeping manufacturing lines moving. Things slipped through the cracks. I can understand that and sympathize. So we will try it again. Hopefully the quality of machines has improved.

Ok, back to this recipe. Usually I would talk here about what I would change, or ways I would alter the flavor profile. Today I have nothing. There isn’t one thing that left me thinking about changing any ingredients. I fell like this recipe and results were perfect and EXACTLY as expected.

Ingredients

  • 1 cup (198g) granulated sugar

  • 2 large eggs

  • 1/2 cup (99g) vegetable oil

  • 1 1/2 teaspoons vanilla or boiled cider

  • 1/2 cup (57g) wheat flour

  • 1 cup (120g) all purpose flour

  • 1/4 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 1/2 teaspoons cinnamon

  • 1/2 teaspoon allspice

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon table salt

  • 1/2 cup (45g) rolled oats, old-fashioned or quick-cooking

  • 3/4 cup (191g) applesauce, unsweetened preferred

  • 1/2 cup (57g) chopped walnuts, optional

Directions

  • Preheat the oven to 350°F. Lightly grease a 9″ x 5″ loaf pan.
  • In a large bowl, mix together the sugar, eggs, oil and vanilla.
  • In a separate bowl, mix together the flours, baking powder and soda, spices, and salt, and add them to the wet ingredients in the bowl.
  • Mix in the rolled oats, applesauce, and walnuts. (I didn’t add walnuts to my bread and it was just fine!)
  • Pour the mixture into the prepared pan. Bake the bread for 55 to 60 minutes, until a toothpick inserted into the center comes out clean. Remove the bread from the oven, and cool completely.
  • Store cooled bread, well wrapped, at room temperature for several days. Freeze for longer storage.
